CRAMA DARIE • WINEMAKING
A compact space designed for precise wines, where we follow each lot from grape to bottle.

The winery is in Topalu, above the Danube. It's not a huge winery, but one where we know every day where each wine lot is and how it's evolving.

Stainless steel tanks have temperature control so we can closely monitor each fermentation. Cleanliness and daily monitoring are more important to us than spectacular technology.

We use barrels only where it makes sense – especially for the Cuvée range. We let time do its work, so the wood adds depth to wines that already have structure from the vineyard.

Each lot has a code, file, and clear path from tank to bottle or Bag-in-Box. We care to know at any time what's in each pallet, not just at label level, but also at story and analysis level.

We harvest manually and bring grapes to the winery in short batches. Reception, destemming, and pressing are done gently to preserve as much as possible of what the vineyard brings.

The winery is worked by family, together with the people who stand by us in the vineyard and winemaking space. From vineyard plans to lot tastings and bottling, we're here day by day, hands on wine and eyes on details.

We use technology so as not to spoil what the vineyard has already done.
