Crama Darie Off-Dry Red Wine in BIB format is a blend of red varieties, classically vinified with skin maceration and stainless-steel fermentation, yet shaped in a comfort-forward style. Fermentation is managed to retain a moderate level of residual sugars, which softens the tannins and highlights the sensation of ripe fruit. On the nose, it opens with sour cherries, forest berries, and plums, supported by a supple structure and well-integrated alcohol. A versatile off-dry red, ideal for family meals, barbecues, pizza, or mixed sharing platters.
Red grapes (predominantly Cabernet Sauvignon and Merlot) are hand-harvested into small crates from our estate parcels and brought to the winery with maximum care to keep the berries perfectly protected. After sorting and destemming, the must is transferred to stainless-steel tanks, where maceration and alcoholic fermentation take place on the skins under controlled temperature. Pump-overs are finely calibrated to achieve vibrant color, ripe-fruit aromatics, and supple tannins—ideal for an elegant semi-dry style.
After pressing off the skins, the wine undergoes malolactic fermentation in stainless-steel tanks to soften acidity and stabilize its flavor profile. Alcoholic fermentation is managed to retain a moderate level of residual sugars, delivering the signature semi-dry sensation. A short period of stainless-steel maturation follows, then stabilization, filtration, and Bag-in-Box bottling—crafted with an uncompromising focus on effortless drinkability and versatility for any occasion.
