Străbun Fetească Neagră 2022 highlights perfectly ripened red and black fruit, ripe tannins, and the balanced structure that defines the variety. Careful maceration drew out colour and tannin without harshness, while maturation polished the wine without masking Fetească’s distinctive character. In the glass, expect sour cherry, plum, fruit preserve, sweet spices and a subtle earthy touch typical of the Dobrogean terroir. A dry wine with a medium-to-full body, equally at home with traditional dishes and modern cuisine built around red meat or more intense cheeses.

WINEMAKING PROCESS

Fetească Neagră grapes are hand-harvested at full phenolic ripeness into 15 kg crates from our own parcels in Horia. Selection takes place both in the vineyard and upon arrival at the winery, ensuring that only sound berries—intact skins and beautifully ripened tannins—enter vinification. The clusters are fully destemmed, and the must is sent to stainless-steel tanks for a classic maceration–fermentation, conceived to marry bright fruit purity with the variety’s serious structure.

Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks, within a range tailored to red wines (≈24–28°C), for approximately 10–14 days, depending on the parcel and its polyphenolic load. Daily pump-overs and, where needed, targeted rack-and-returns allow for a poised extraction of color, tannin, and aroma, without pushing the wine toward harshness. Once alcoholic fermentation is complete, the wine is separated from the pomace and guided into a complete malolactic fermentation in stainless steel, integrating acidity and refining texture.

Afterwards, the wine is allowed to evolve for several months in stainless-steel tanks, with extended time for natural clarification and the settling of sediments. Tartrate stabilization is carried out at a controlled temperature, and the pre-bottling filtration is intentionally fine, so that Străbun Fetească Neagră retains its density, fruit-driven freshness, and a strong potential to develop in bottle.
