Străbun Merlot 2022 is crafted as a generous, fruit-forward red with an inviting, easygoing structure. Hand-harvested grapes are vinified in stainless steel with controlled maceration to extract color and gentle tannins, without pushing the wine into harshness. The aromatic profile is led by cherries, plums, and stewed red fruits, with a subtle touch of chocolate and dried herbs. Full malolactic fermentation and stainless-steel aging lend a velvety feel and smooth glide across the palate. A clean, dry Merlot—straightforward, approachable, and naturally versatile at the table.

WINEMAKING PROCESS

The Merlot grapes for Straubun Merlot 2022 are hand-harvested from our own vineyards into small crates, preventing berry crushing before arrival at the winery. Harvesting timing is chosen so that the grapes show ripe tannins, healthy skins, and an aromatic profile centered on red and black fruit. Upon reception, the fruit is meticulously sorted, fully destemmed, and directed to stainless-steel tanks for vinification.

After pressing off the skins, the wine undergoes complete malolactic fermentation in stainless steel, softening acidity and highlighting the variety's signature velvety texture. A period of quiet ageing in stainless steel follows, allowing for natural clarification, then tartaric stabilization (natural and cold) a gentle filtration prior to bottling. Provenbun Merlot remains a pure, fruit-driven wine with an inviting structure, seamlessly suited to a wide range of culinary occasions.
