Capidava Alb 2024 unites Tămâioasă Românească, Fetească Regală and Chardonnay in an approachable demi-sweet style designed to please a wide audience. Tămâioasă contributes a floral spectrum and ripe-grape character, Fetească adds lift and freshness, while Chardonnay completes the blend with structure. Fermentations take place in stainless steel at controlled temperature, then are carefully stopped so that the residual sugar rounds the palate without weighing the wine down. The result is an expressive demi-sweet white with well-defined fruit, sufficient acidity and a pleasing texture—equally suited as an aperitif or alongside simple, everyday menus.

WINEMAKING PROCESS

The grapes for Capidava Alb 2024 are hand-harvested from dedicated parcels of Tămâioasă Românească, Fetească Regală and Chardonnay, sourced exclusively from the winery’s own estate. Harvesting takes place at first light, in small crates, to protect the berries until they reach the cellar. Tămâioasă Românească is picked for pure aromatic intensity, Fetească Regală for acidity and vibrancy, and Chardonnay for structure and complexity—so each variety makes its distinct, clear contribution to the blend.

After destemming, Tămâioasă undergoes an extended maceration in the fermenter, at controlled temperature, with sequential inoculation using non-Saccharomyces species. This provides bio-protection while elevating the variety’s floral and spicy profile. All components are then gently pneumatically pressed under inert-gas protection, followed by delicate cold settling and racking into stainless-steel tanks. Alcoholic fermentations take place separately at low temperatures with selected yeasts, carried through to a residual-sugar level that supports the demi-sec style without tipping the wine into heaviness.

After fermentation, the lots are kept on fine lees for several months, with bâtonnage tailored to each tank, to build volume, creaminess, and an inviting texture. The final assemblage is conceived so that Tămâioasă defines the aromatic signature, Fetească Regală brings tension and freshness, and Chardonnay delivers structure and complexity. Stabilisation and filtration are minimally invasive, followed by bottling at the winery—ensuring Capidava Alb remains an expressive, poised demi-sec wine, effortlessly approachable for a wide audience.
