

Străbun Cabernet Sauvignon 2022 comes from later-harvest parcels, picked when the grapes reach full ripeness and achieve excellent concentration in tannins and colour. Vinified in stainless steel, with extended maceration and temperatures tailored to the variety, it delivers a profile of blackcurrants, sour cherries and finely integrated vegetal notes. Malolactic fermentation and a period of maturation in tanks temper the structure while preserving a clear, confident tannic backbone. The result is a dry, straightforward Cabernet with character—an ideal match for hearty dishes and for lovers of structured reds.
The Cabernet Sauvignon grapes for Străbun Cabernet 2022 are hand-harvested from our own Horia vineyards, into small crates, to protect the integrity of the berries. Picking takes place at full ripeness, when the tannins are mature and the skins show excellent concentration of color and aroma. After meticulous sorting in the vineyard and upon reception at the winery, the bunches are fully destemmed, and the must is directed to stainless-steel tanks for a classic maceration–fermentation on skins.
Alcoholic fermentation unfolds in temperature-controlled stainless-steel tanks, under a thermal regime tailored to the variety (≈26–28°C), over approximately 14 days. Skin maceration is supported by regular pump-overs and lot-specific adjustments, extracting deep color, concentrated dark fruit, and a firm yet finely defined tannic structure. After alcoholic fermentation is complete and the wine is pressed off the skins, it undergoes a full malolactic fermentation, which softens acidity and helps integrate the tannins.
The maturation stage takes place predominantly in stainless-steel tanks, with part of the lot spending time in oak barrels to add additional layers of complexity and aromatic finesse. The resting period is accompanied by carefully timed rackings, natural and cold tartaric stabilization, followed by a light filtration before bottling. In this way, Străbun Cabernet 2022 brings together technical precision with the forthright expression of the variety and the Dobrogean terroir.
